Cajun Hummus
Hummus is a slightly tangy Middle Eastern dip that is traditionally eaten with pita bread. It is tradionally made from chick peas. The following recipe hails from Louisiana, in the South of the United States where foods are spicy. It goes to show you that invention is the mother of reality. If you do not have chick peas on hand, this is a great way to still enjoy hummus at your next party or meal! Ingredients One or two cans of beans, red, white or black or, cook your dried beans yourself Drain and put in blender Lots of kosher salt (1 tsp as needed) Red pepper (1/4 tsp) Cumin (3/4 tsp) Black pepper (1/4 tsp) Lemon juice, (1-2 tsp to taste) Olive Oil Jalepeno Peppers (or banana peppers) Steps Blend soft beans to a paste; add jalapenos to taste, and then pour in olive oil till it reaches consistency you like. If you use peppers, chop them up finely and add for that extra ZING! Use seasonings until you reach desired flavor. Store; keeps long time. Serve with pita bread or rice crackers.
